One of my very favorite recipes to make, came from a church compiled recipe book. Actually a lot of my favorite recipes came from this one particular cook book. I’ve often
wondered what about this recipe was “swiss,” I think I’ve now figured it out. lol. I’m assuming the soupy cheesy goo-stuff is the actual “swiss” part (think of swiss steak, i don’t know, people, just go with it.
) And no this recipe isn’t going to look exactly like the picture, but it’s as close as I could get.
Anyhow, here’s the recipe!
2 cups chunk chicken
2 ounces canned green chiles
1 large can of red enchilada sauce
1 can cream of chicken soup
lots of cheddar cheese
(who needs a measurement for that, right?!)
12 (or however many you decide) tortillas
Spray 13″ X 9″ baking dish with cooking spray. Cut tortillas into fourths. Blend chicken, chiles, & cream of chicken soup. Heat enchilada sauce. Dip cut tortillas into enchilada sauce & layer on bottom of pan adding a little extra sauce. Spoon 1/3 chicken & enough cheese to cover the layer over tortilla layer. Do 2 more layers. Sprinkle extra cheese on top & any leftover sauce (I really like enchilada sauce
), bake in a oven preheated to 375 degrees for 45 minutes.
